Can I wake this thread up, please?

Trying Irish Soda Bread recipe, and they all want buttermilk. What is the Turkish equivalent?

That makes life easy! Like the author of one of your links, I consider Ayran to be an acquired taste: one sip for me was enough to know I never wanted to acquire it.

Ayran from Bim is quite sublime. The rest pale into insignificance.Love the stuff. As for Buttermilk, make your own, it is a by-product of making butter.

I have got a bun in the oven (!) as I sit here. Made from Ayran. We will see.

ps That seems to have worked OK with the ayran. Good crust and centre not too dense.

I read somewhere that using full fat milk and putting a teaspoon of lemon juice or vinegar
into a pint of milk does the same. The acidity of the juice or vinegar does the trick.
